Barfi

Barfi or burfi is a sweet from the Indian subcontinent. Plain barfi is made from condensed milk, cooked with sugar until it solidifies. The name is derived from the Persian word barf which means ice since barfi is similar to ice/snow in appearance.
Barfi is often flavoured with fruit (such as mango or coconut) or nuts (like cashew and pistachio) and spices such as cardamom. Visually, they are typically cut into square, diamond, or round shapes. They sometimes (but not always) resemble cheese and may have a hint of cheese scent to it For this reason, barfi is sometimes called "Indian cheese cake". They vary greatly in their colour and texture, depending on type

Sweet, salty and spicy, this crunchy mixture is composed of spicy dried ingredients, which may include fried lentils[1], peanuts, chickpea flour noodles, corn, vegetable oil, chickpeas, flaked rice, potato stick, fried onion and curry leaves. This is all flavored with salt and a blend of spices that may include coriander turmeric powder, crushed chili powder and mustard seed. The traditional Indian food can be eaten as part of a meal; however as a standalone snack is usually consumed with the hands. Chivda is a delicious anytime snack, usually served with Indian chai. This light delicate snack is very popular during the Festival of Diwali.

Foolecha

Foolecha is fried bread made from flour, salt, sugar, yeast, butter and oil to fry. Rub butter into flour to resemble bread crumbs. Add salt, sugar, yeast and bind with water. Rest in container for 2 hours to rise. Heat oil in frying pan. Roll out dough size a pizza, about 2 to 3 mm thick. Use a cup to cut out round circle on rolled out dough. Rest cut dough on a sheet of cloth while oil is getting hot. Deep fry in 1 1/2 cup oil. Cooking process is quick. Foolecha will rise rapidly, turn and fry till golden brown.

Lamb kebab's made from my grandfather time is still my favorite. Made from fresh ground lamb, fresh herbs, onions, green chili, garlic and ginger. Cooked over hot charcoal on skewers. Served with fresh coriander chutney fresh lemon and foolecha.

An Anaheim pepper is a mild spicy variety of chili pepper.Good for stuffing and roasting.You can find them usually in Indian grocery
shops.

Its odour, when uncooked, is so strong it must be stored in airtight containers; otherwise, the aroma will contaminate other spices stored nearby. However, its odour and flavor become much milder and more pleasant upon heating in oil or ghee, acquiring a taste and aroma reminiscent of sautéed onion and garlic.
