Barfi or burfi is a sweet from the Indian subcontinent. Plain barfi is made from condensed milk, cooked with sugar until it solidifies. The name is derived from the Persian word barf which means ice since barfi is similar to ice/snow in appearance.
Barfi is often flavoured with fruit (such as mango or coconut) or nuts (like cashew and pistachio) and spices such as cardamom. Visually, they are typically cut into square, diamond, or round shapes. They sometimes (but not always) resemble cheese and may have a hint of cheese scent to it For this reason, barfi is sometimes called "Indian cheese cake". They vary greatly in their colour and texture, depending on type
